1 small onion
1/2 cup vegetable oil
3 medium potatoes, peeled and cut into 1 1/2-inch
1/2 teaspoon salt
1/8 teaspoon pepper

Sauté onion in oil in a heavy 10-inch cast-iron skillet until transparent; add potatoes. Fry until potatoes are tender and golden, turning as necessary. Sprinkle with salt and pepper.
