1 stick butter
1 cup pecans — chopped
1 teaspoon vanilla
1/2 cup plain flour
1/2 cup white sugar
1/2 cup brown sugar
2 eggs — beaten

Pour warm butter over chocolate chips and stir. Blend all remaining ingredients and stir into chocolate chip mixture. Pour into an unbaked pie shell. Bake at 350° for 30 to 40 minutes.

TARRAGON CHICKEN CASSEROLE

1 can cream of chicken soup
1 cup half and half
2 teaspoons tarragon
1/4 teaspoon pepper
1/2 package linguine or spaghetti — cooked and drained
3 cups chicken — cooked and cubed
1/4 cup parmesan cheese — grated

Combine soup, cream, tarragon, and pepper. Stir in the linguine and chicken. Transfer to ungreased 4 quart baking dish. Sprinkle with Parmesan cheese and paprika if desired.

Bake uncovered at 350 degrees for 30 minutes.

TEXAS CAKE

2 cups sugar
2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 8 oz container sour cream
2 large eggs — lightly beaten
1 cup butter
1 cup water
1/4 cup cocoa

Combine first 4 ingredients in a large bowl: Stir in sour cream and beaten eggs.

Melt butter in a heavy saucepan over medium heat. Whisk in 1 cup water and cocoa. Bring to a boil, whisking constantly. Remove from heat.

Stir cocoa mixture into flour mixture. Pour batter into a lightly greased 15 x 10 inch jellyroll pan.

Bake at 325° for 20 to 25 minutes or until a wooden pick inserted in center of cake comes out clean.

Spread Fudge Frosting evenly over warm cake.

Fudge Frosting:

Melt butter in a saucepan over medium heat. Whisk in milk and cocoa, and bring mixture to a boil. Remove from heat. Gradually add powdered sugar, stirring until smooth; stir in vanilla.

Peanut Butter-Fudge Cake:

Omit sour cream in cake, and substitute 1 1/2 cups creamy peanut butter and 1/2 cup buttermilk.

Continue as directed to prepare cake and Fudge Frosting. Garnish with miniature peanut butter cup candies, halved, if desired.

THE ULTIMATE POTATO

6 large baking potatoes, boiled
1 cup light cream
3/4 stick butter — melted
1/2 pound Cheddar cheese, grated
1 cup sour cream
1/2 cup green onions — chopped
6 strips bacon, fried and crumbled

Peel cooled potatoes and grate. Combine cream, butter, cheese and sour cream in double boiler and stir just until melted. Add cheese mixture to grated potatoes and put in a greased casserole dish. Bake at 350 degrees for 30 minutes. Top with onions and bacon. Bake another 5 minutes.

THUMBPRINT COOKIES

1/2 cup butter — softened
1/4 cup brown sugar
1 egg — separate out yolks
1/2 teaspoon vanilla
1 cup flour
1/4 teaspoon salt
1/2 cup pecans — finely ground

Cream butter and sugar. Add egg yolk and vanilla, beat well. Then add flour and salt and beat well. Slightly beat egg white in one bowl. Finely grind pecans into another bowl.

Roll dough into 1 inch balls – dip in egg white, then in nuts.

Place 1 inch apart on ungreased baking sheet.

Bake at 350 degrees 5 minutes. Remove and quickly press thumb down on each cookie making depression in center. Return to oven and bake 10 minutes longer. Cool. Place colored powdered sugar icing in depression in each cookie.

2/3 cup Chopped macadamia nuts or almonds — 3/4 cup

If your machine does not have a preheat cycle, heat milk in microwave on HIGH power for 30 seconds to 80° F. Add to the bread pan with remaining ingredients except the macadamia nuts or almonds according to the manufacturer directions for your machine. Measure macadamia nuts or almonds to add at the beep or when manufacturer directs. Set the CYCLE, LOAF SIZE, and CRUST SETTING. Press START.

After about 5 minutes of kneading, check the consistency of your dough. If dough is not in a smooth round ball, open lid and with machine ON, add liquid a tablespoon at a time if too dry, or add flour a tablespoon at a time if too wet.

Remove the bread promptly from the pan when the machine beeps or on completing the cycle. Cool on rack before slicing.

TOASTED PECAN ICE CREAM SAUCE

1/3 cup butter
1 cup Karo syrup
1 egg — slightly beaten
1 tablespoon vanilla
1 cup pecan halves — toasted

Combine sugar, butter, Karo, and egg and cook stirring constantly to full boil. Remove from heat. Stir in vanilla. Just before serving, stir in pecans. Serve warm or cool over ice cream, cake, pancakes, or waffles.
