Turkey Burgers

Makes 4 servings

¾ pound ground turkey
2 scallions, minced
1 tbl. soy sauce
1 tbl. ketchup
¼ tsp. garlic powder
¼ tsp. ground pepper

Mix well and make into patties.
Pan fry or grill for about 7 minutes per side.

Three Cheese Croissants

Makes 4 servings

4 large croissants, split
1 cup grated Swiss cheese
1 cup grated Cheddar cheese
5 large eggs
1 cup milk
½ tsp. pepper
salt to taste
grated Parmesan cheese

Preheat oven to 350º.

Butter 4 au gratin dishes. Place the bottom half of each croissant in a dish, cut side up. Spread Swiss cheese on each. Follow with the Cheddar cheese. In a medium bowl, beat the eggs, milk, and seasonings until they are frothy. Pour 2/3 cup of the egg mixture over each croissant and replace the tops. Sprinkle the Parmesan cheese over the tops.

Bake 20 minutes or until the eggs are solid and the croissants are a golden brown.

Strawberry Brulee

Serves 6-8

2 – 3 oz. pkgs. Cream cheese, softened
1 cup sour cream
2 Tbl. brown sugar
1 qt. fresh strawberries
¼ cup packed brown sugar

Preheat oven to Broil.

In a bowl, beat cream cheese with electric mixer until fluffy. Add sour cream and 2 Tbl. brown sugar; beat until smooth.

Reserve 1 berry for garnish. Halve the remaining berries and arrange evenly in bottom of a shallow 8” round pan. Spoon cream cheese mixture over berries. Sieve remaining ¼ cup brown sugar evenly over cream cheese mixture.

Broil 4”-5” from heat for 1 – 2 minutes or until sugar turns golden brown.

Slice reserved berry; arrange on top. Serve immediately.

Spicy Baked Pears

Makes 10 servings

5 large ripe pears
½ cup brown sugar
¾ cup orange juice (enough to make ½ inch of liquid in baking dish)
Cinnamon
Nutmeg
Pinch of ground Cloves
Vanilla ice cream

Preheat oven to 350Ëš. Spray a 10×15” baking dish with Pam. Spread the brown sugar over the bottom of the dish. Sprinkle generously with the spices. Slice pears in half; remove cores and stems. Lay pears cut side down on sugar mixture. Pour orange juice over pears. Bake for 15-20 minutes, or until pears are tender.

To serve: Ladle some of juice mixture onto serving plate and place pear, cut side up, on plate. Place a small scoop of vanilla ice cream in center of pear.

Pear Clafoutis

Serves 6 – 8
2 – 3 pears
4 large eggs
1/3 cup sugar
2 Tbl. butter, melted
1 cup Half and Half
1 teaspoon Vanilla
1 teaspoon ginger

Preheat oven to 350º. Spray a 9” pie dish with cooking spray. Peel and core pears; set aside.

In a medium bowl, whisk together remaining ingredients. Pour a thin layer of egg mixture into pie dish. Layer pears over the egg mixture and pour remaining mixture over the pears. Bake 45 – 50 minutes or until top is lightly browned.

Serve warm.

Variation: Add one can of drained sour cherries to pear slices. Pour remaining egg mixture over the fruit.

Oat Pie

Serves 6

¼ cup butter, softened
½ cup sugar
½ tsp. cinnamon
½ tsp. cloves
¼ tsp. salt
1 cup corn syrup
3 eggs
1 cup old fashioned rolled oats

Preheat oven to 350º.

Cream butter and sugar. Add cinnamon, cloves, and salt. Stir in corn syrup. Add eggs, 1 at a time. Stir in oatmeal. Pour mixture into an unbaked 9” pie shell.

Bake for 50 – 60 minutes. Serve with whipped cream or ice cream and fresh berries.

Variation: Add chopped apples and/or 1 cup raisins.

May be frozen.

Huevos con Queso

Makes 8 servings

Combine and mix well with whisk:
10 eggs, beaten
16 oz. cottage cheese
2 cups shredded Monterey Jack or Cheddar cheese
1 4-oz. can chopped green chiles
¾ – 1 tsp. cumin

Pour into well-greased 9 x 13” dish. Bake at 350˚ for 45 minutes. Serve with salsa and/or sour cream on the side.

For 6 servings in a 7” x 11” dish:

7 eggs, beatens
12 oz. cottage cheese
1 ½ cups shredded Monterey Jack or Cheddar cheese
1 4-oz. can green chiles
½ tsp. cumin

Heavenly Bananas

½ cup sour cream
2 Tbl. sugar
1 Tbl. orange juice
1 Tbl. grated orange rind, optional

Mix all the above ingredients. Drizzle over bananas. Sprinkle with wheat germ.
Enough for 16 bananas/servings.

Gingerbread Waffles

For 4-6 waffles

Your favorite waffle recipe

To that add:
2 tsp. ground or fresh ginger
2 tsp. cinnamon
1 tsp. ground cloves
2 Tbl. molasses or sorghum

Mix well. Bake waffles. Serve with powdered sugar, fresh fruit garnish, and syrup.

Ellen’s Cherry Bread Pudding

Serves 8-10

1 loaf of crusty bread, torn into small pieces
8 well-beaten eggs
2 ½ cups milk
½ cup sugar
3 tsp. cinnamon
2 tsp. vanilla extract
1 tsp. almond extract
1 can tart pie cherries in water, drained

Grease a 9 x 13” baking dish. Place bread cubes in dish. Mix together in large bowl or blender the eggs, milk, sugar, cinnamon, vanilla extract, and almond extract. Pour over bread cubes. Fold in cherries. Pour in prepared baking dish. Cover and refrigerate overnight.

Preheat oven to 350º.

Bake for 1 hour or until mixture has set. Cool slightly and serve with Rum Sauce.

Rum Sauce:
4 Tbl. butter
½ cup Half and Half
½ cup sugar
½ tsp. rum extract

Melt butter in saucepan. Add Half and Half and sugar. Stir until sugar is melted. Bring to a boil, reduce heat and simmer 5 minutes. Remove from heat and stir in rum extract. Keep warm until ready to serve.
