ORANGE PECAN TOAST FOR TWO

2 eggs
1/3 cup orange juice
2 2/3 tablespoons milk
2 tablespoons orange liqueur
2 tablespoons sugar
1 1/2 teaspoons vanilla
1 dash nutmeg
1/2 loaf French or Italian bread — cut 1/2″ thick
2 2/3 tablespoons butter — melted
1/4 cup pecans — chopped
maple syrup, butter and cut up fruit for
serving.

Whisk together the eggs, orange juice, milk, liqueur, sugar, grated rind, vanilla and nutmeg. Place the bread in a single layer with bread fitting snugly together. Pour the milk mixture over the bread, cover and refrigerate overnight turning once.

The next morning, preheat the oven to 400°. Pour the melted butter onto a jelly roll pan, spreading it evenly. Arrange the soaked bread slices in a single layer on the pan and sprinkle then with the pecans. Bake the slices for 20 to 25 minutes or until golden. Remove the toasts from the pan to a plate and serve immediately with maple syrup, butter and fresh fruit.

OVEN FRIED CHICKEN

1 tablespoon butter
2/3 cup bisquick® baking mix
1 1/2 teaspoons paprika
1 1/4 teaspoons salt
1/4 teaspoon pepper
2 1/2 pounds chicken — (2 1/2 to 3 1/2)

Melt butter in 13 x 9 inch dish.

Mix dry ingredients. Coat chicken. Place in dish. Bake uncovered 35 minutes. Turn; bake until done about 15 minutes.

1 cup milk
1/2 teaspoon seasoned salt
Bacon or sausage — cooked
1 cup shredded cheddar cheese
1 tablespoon onion — minced

Beat eggs, milk, and salt together well. Stir in remaining ingredients.

Pour into a greased baking dish. Bake uncovered 40 to 45 minutes at 325°.

If you use 4 eggs bake for 35 minutes.

Place ingredients in 2 quart casserole or crock pot, cover and bake on low for 4 or 5 hours – 6 to 7 hours in the crock pot.

3 medium Potatoes
1/4 cup vegetable oil
1 tablespoon grated Parmesan cheese
1/2 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon paprika
1/4 teaspoon pepper

Scrub potatoes, and cut each into 1/8 inch wedges. Place wedges, slightly over-lapping, in a single layer in a 13 x 9 x 2-inch baking pan.

Combine remaining ingredients, stirring well. Brush potatoes with half of oil mixture. Bake, uncovered, at 375嬡 for 45 minutes, basting occasionally with remaining seasoned oil mixture.

PANCAKES FROM THE PERFECT PANCAKE MIX

1 tablespoon butter
1 egg
1/2 cup buttermilk or sour cream
1/2 cup Perfect Pancake Mix

Put butter on griddle and melt. Lightly beat the egg with buttermilk or sour cream. Add the pancake mix and stir just until smooth. Pour onto griddle and turn when air bubbles form on surface (about 1 minute). Makes about 5 medium pancakes.

PARTY CHICKEN SALAD

2 cups chicken breasts, no skin, no bone, R-T-C — cooked and cut up
2 tablespoons lemon juice
1/2 teaspoon salt
1 cup celery — sliced
1 cup seedless white grapes
2 eggs — hard cooked chilled
and chopped.
1/2 cup mayonnaise
1/4 cup slivered almonds — blanched

Sprinkle lemon juice and salt over chicken. Chill several hours.

Toast almonds at 300 degrees for 3 to 4 minutes.

Toss lightly all ingredients. Serve in lettuce lined bowl.

Daisy trim: quarter 2 hard cooked eggs lengthwise. Remove yolks. Sieve the yolks. Arrange whites for petals; use sieved yolks for centers.

2 cups Rice Chex®
1 cup Salted mixed nuts
2 cups Cherrios
2 cups Pretzel
8 tablespoons butter
2 Tablespoons Worcestershire sauce
1 1/2 teaspoons seasoned salt
3/4 teaspoon garlic powder
1/2 teaspoon onion powder

Heat oven to 250 degrees. Melt butter in shallow pan. Stir in Worcestershire and salt. Add cereal and nuts. Mix over low heat until all pieces are coated. Heat for 45 minutes in oven stirring every 15 minutes. Spread on paper towel to cool.

Peal and cut potatoes as for french fries.

Place on heavy foil. Sprinkle salt, pepper, cream and butter over potatoes. Cover with foil.

Cook on grill or in oven at 350 degrees for 1 hour.

Just before serving open foil and sprinkle potatoes with the shredded cheese.

PEACH CRISP

4 cups Peaches — sliced
3/4 cup sugar — divided
1/2 teaspoon cinnamon
1 cup flour
1/2 cup butter

Toss peaches with 1/3 cup sugar and cinnamon. Spoon into greased 9 inch pie plate. Combine flour and remaining sugar. Cut in butter. Sprinkle on top of peaches.

Bake 375 degrees 35 to 40 minutes.
